Method
- Place the garlic in a tall measuring jug along with the egg yolks, mustard, vinegar, and several pinches of salt.
- Blitz with a stick blender for 30 seconds.
- While blending, slowly add the oil in a thin, steady trickle.
- After a minute, increase the trickle to a thin stream, continuing to blend.
- Once all the oil has been added, continue blending until the mixture is fully combined.
- Taste and adjust with more vinegar or salt, if needed.
