Garlic (Clove, finely grated)2
Oil (House Smoked)500 ml

Method

  1. Place the garlic in a tall measuring jug along with the egg yolks, mustard, vinegar, and several pinches of salt.
  2. Blitz with a stick blender for 30 seconds.
  3. While blending, slowly add the oil in a thin, steady trickle.
  4. After a minute, increase the trickle to a thin stream, continuing to blend.
  5. Once all the oil has been added, continue blending until the mixture is fully combined.
  6. Taste and adjust with more vinegar or salt, if needed.
